No I’m not an alcoholic! I took a gravity reading of the C-Bomb American Pale Ale I brewed last Wednesday, and it’s hit what is probably it’s FG of 1011. Bitterness is a little high, but once it’s in the keg and has a little age on it, it will drop out a bit.
I raised the temperature a couple of days ago as a diacatyl rest and that was another reason to taste it today. It’s tasting OK, no perceivable diacatyl. Though I didn’t taste it in the Stout either.
It’s not clear yet, but fermentation is done; so I’ll crash chill it today and for the next couple of days, still unsure if i’ll rack to secondary yet for dry hopping, or hop it in the keg.
